Keto Caramel Slice
This no bake slice is a sweet hit and you don’t need a lot to get your little treat. The secret to getting this right is patience…. It takes about 25-30 minutes for the caramel and you will need to constantly stir it until if thickens and deepens in colour. It’s definitely worth the wait.

1 cup of almond meal/flour
1/2 cup desiccated coconut
60 gram melted butter or coconut oil
1 square of dark chocolate ( I use 90% Lindt)
1 cup pouring cream
250 grams butter
3-5 Tbs Natvia sweetener
Base: Melt butter and then drop the chocolate into the butter and let it melt. Add the other base ingredients to butter and chocolate and mix until well combine. Press into a lined slice tin and transfer to the freezer to set while you make the caramel.
Caramel: Over a low heat melt butter with cream and sweetener and keep stirring and shifting the mixture around in the saucepan. The caramel will thicken over time and deepen in colour. Don’t let the mixture boil over, if your saucepan gets too hot remove from heat until settles down. You may have to adjust your cooking temperature often to keep a nice consistency to how your caramel develops. It will take around 25-30minutes, so do be prepared for this step.
Once the caramel is done, cool it down and then pour it over the base. Return to the refrigerator this time and leave to set. Once it as set, slice it into pieces and store in the fridge. I like to cut mine up into little its to enjoy with a cuppa.
Caramel Tips: If your caramel mixture separates as it is cooling, you can blend it in a nutribullet or similar to recreate the emulsion.
A stainless steel pot or saucepan seems to work best and use a rubber spatular type spoon to stir it.
